Ellie Rose Schultze grew up in St. Augustine and got her Business Degree at the University of Central Florida. Starting at just 14 years old, she’s worked her way through nearly every position in restaurants, from bussing tables to head chef. She’s an avid traveler who takes inspiration from her adventures in over 50 countries. Eventually she landed in NYC to attend culinary school and learn the ropes in the fast-paced cut-throat kitchens of the city.
Ellie moved back to St. Augustine in 2021 to work towards the goal of opening a restaurant. While her own concept was still in the pipeline, she’s jumped straight back into the community as a private chef, caterer, and volunteer. During that time, she won several accolades and awards from St. Augustine Food & Wine Festival, Whiskey, Wine and Wildlife Festival, and was recognized for outstanding culinary by the VCB and the Florida Restaurant and Lodging Association. Her recipes and story have been featured in regional and local publications.
In 2023, she stepped into an Executive Chef role to open Chez L’amour on San Marco Ave, Uptown St. Augustine.
Chez L’amour is a music venue, jazz bar, event space, eclectic social dining concept and romantic destination that has an international love affair with food. You’ll find dishes inspired by world cuisines from South East Asia to the South of France, intentionally pushing boundaries and bringing something new to the old town.
