Brendan’s adolescent years was most cherished by his time in his Abuelitas kitchens cooking with them their ability to put all of their love and heart into the food with big bold Cuban flavors for the whole family was something he always admired. His Grandmother was responsible for introducing him to the culinary world and sparked his love for all things in the kitchen. At age 14 he has been in professional kitchens. Since then, Brendan has filled every role in the kitchen starting as a dishwasher, bakers assistant and continuing on as a line cook, a pastry chef and then to sous chef, chef de cuisine and executive chef of some extremely successful restaurant groups here in Florida for 19 years now. His uncles are all commercial fisherman and has been around seafood for most of his life. His love for art of all kinds carries through in his unique use of ingredients to fill each dish with color, creativity and, above all, flavor.
