Smokin’ Spencer’s Q

Born and raised in one of the nation’s barbecue capitals, Spencer Matthiesen was born with BBQ in his blood. Growing up in Dallas, he spent most of his life immersed in some of the best barbecue imaginable – particularly brisket, aka the king of all Texas BBQ.

Spencer was blessed to be brought up in a family where food was celebrated. His mom was an excellent cook and he holds many memories with his dad on the grill. A self-taught pitmaster, Spencer started cooking for friends, family and neighbors who continually taste-tested to help him produce the level of Q he now proudly serves.

In 2019, he established Spencer’s Smokin’ Q serving guests “BBQ and Beyond”. Aside from traditional barbecue, Spencer loves to experiment with melding the different cultures of his Texas roots and creates dishes that bring together BBQ and Tex-Mex like his smoked chicken enchiladas, brisket tacos, and smoked queso.

Since founding his company, Spencer continually has won awards both in professionally judged contests and people’s choice awards. Most recently, Spencer’s food truck took home the gold at Porkapalooza and picked up the Overall People’s Choice Award at Whiskey Wine & Wildlife as well as the 2025 St. Augustine Food + Wine Festival.

Aside from catering private events, Spencer is passionate about providing fare via his food truck for local events and building relationships with the St. Johns County community.
